We had three really solid waitresses, myself included, who could handle pretty much anything. Then one of them left. The other remaining girl--let's call her "Chris"-- and I can still pretty much handle anything--she's been there for ten years, and I'm the kind of server where customers regularly drop me a 30% tip and then come into the back to tell the owner "this girl gave us excellent service." But "Chris" is leaving for college in two weeks. So about a month and a half ago, he brings on this girl--let's call her "Kelly"--that is seventeen and has never had a job before.
